When I tell you that this syrup tastes like Christmas in a cup…well… it really does taste like Christmas in a cup! Sweet, caramel flavors, infused with warming cinnamon spice, use this to make a cinnamon dolce latte, or just stir it into a plain coffee for a magical way to start your day.

The process to make this dolce syrup recipe is super easy, just like making simple syrup, you simmer sugar and water. To make this cinnamon syrup I add two cinnamon sticks to the water and sugar while it simmers, and I also use some brown sugar for rich caramel flavors.

Where else can you use this homemade cinnamon dolce syrup?

While I love it in my coffee you can also:

  • Add it to hot tea
  • Make an iced cinnamon dolce latte
  • Stir it into plant-based milk for a sweet creamy drink
  • Drizzle it over vegan vanilla ice cream
  • Add it to a cocktail (it pairs lovely with bourbon or rum)

How can I gift this?

Syrup keeps very well so you can easily make it ahead of time, pour it into sterile bottles or jars, tie a little bow around the jar and add a label, then gift it to a luckily loved one. It’s very affordable to make and is a great gift on its own, or it’s a beautiful addition to a gift basket. I like to leave the cinnamon sticks in the syrup which not only looks pretty, but it means the cinnamon will continue to infuse and make the syrup even tastier!

How to Make Cinnamon Dolce Coffee Syrup:

Add the water, white sugar, brown sugar, and cinnamon sticks to a small saucepan. Bring to a gentle boil over medium heat and cook for 10 minutes without stirring. Remove from the heat then stir in the vanilla extract. Allow the syrup to cool then transfer it to a sealable bottle or jar to store the syrup in. I like to put the cinnamon stick in the jar along with the syrup as the cinnamon flavor will continue to infuse in the syrup the longer it sits. It also looks pretty! The syrup can be stored at room temperate or in the fridge for up to 6 months.

Notes

Can I use ground cinnamon? I like to use cinnamon sticks so the syrup is smooth and not gritty. If you prefer to use ground cinnamon, substitute the two sticks with 1 teaspoon of ground cinnamon. You may want to strain the cooled syrup through cheesecloth to remove any grit.
